I like calling carrots buried treasure because of their versatile nature. My dog gets most excited whenever it’s time to harvest this fun vegetable because of its crunchy and sweet taste. I prefer growing carrots because I can enjoy the fruits of my labor for weeks and months.

As soon as my family sees me filling cartons with mature carrots, they know it’s time for cake, creamy soup, or scrumptious “gajar ka halwa” (an Indian based carrot dessert). If you’re a fan of this root vegetable like I am, it’s super important to know how to store it properly.

  • Harvesting at the right time matters the most. If you pull out the root crop before time, you will get baby carrots, which are also great but cannot be stored for the long term. Inversely, a delay in harvesting will turn carrots woody, and they will lose their actual taste.
  • Pull out the carrots gently. Always make sure to loosen the soil using a garden fork and avoid damaging the roots in the process. Carefully check all the carrots and keep the bruised or plumpy ones aside for immediate consumption.

I planted the seeds by the end of March and harvested my treasure around June. Can you believe that I am still using the ones from the same lot and have a few left for another 1 to 2 weeks? 

Without any further delay, let’s explore how to store carrots from the garden. The second method is my personal favorite and the easiest one!

Storing Carrots in Sand – The Traditional Method

Prepare the roots of the vegetable as mentioned in the above section. Trim off the leafy part, but do not chop off the root, as that can cause decay.

  • Slightly moisten the sand and pour it into a vegetable tub, wooden box, or big bucket (5-gallon approx). Fill the bottom of the storage container with moist soil, creating a 2 to 3-inch layer.
  • Keep the carrots on the sand and make sure to leave some space between each piece. Create a single layer only, and once done, cover the root vegetable properly with sand. Repeat the process till the container is full. 
  • Make sure that the top layer is made up of moist soil, similar to the one used at the bottom. Place the container in a cool and dry spot and take out the carrots whenever needed. 

I did this process in my garden, and by the end, the storage box was extremely heavy and almost impossible to move. Make sure you plan everything accordingly. 

How to Store Carrots in the Refrigerator? The Easiest Method

This method is my personal favorite, since it is one of the easiest ways to store carrots. It does not require any extra material and is ideal for long-term storage.

  • Start by chopping off the leafy part of the vegetable. Do not wash or dust off the excess soil, and place them one by one in an airtight container or a plastic storage bag. 
  • Keep the storage box or the bag in the crisper drawer or at the back corner of your refrigerator. Poke small holes in the container to maintain the airflow. 
  • I also prefer putting a small tissue paper inside the bag to absorb excess moisture. Keep a regular check, and if you feel that the carrots are drying up, consider adding slightly dampened tissue inside the storage bag or box.

This is a simple method that works every time for me and does not require much hassle. Root vegetable storing can be tricky, but following the right methods can give you fruitful results.  

A Suggestion Based on My Personal Experience:  I once chopped the carrots into medium-sized pieces and stored them in a jar filled with water. Though the vegetable stayed crunchy, I personally felt a slight change in its taste; therefore, I would not recommend storing carrots in water.

  • Simply cover the unharvested carrots with a 10-12 inch layer of husk or straw before the frost appears. You need to keep the soil cold, but not frozen.
  • I saw my neighbors adding a layer of tarpaulin to keep the mulch in place. During harsh weather conditions, if you feel that the ground has become too cold or wet, it is better to pull out the carrots and store them inside. 

Even if you follow the best methods, some carrots will rot, and that’s completely normal. The trick is to catch them early, before they affect the other crops too.
